I am in Uganda for the summer enjoying the lockdown from Covid-19 with a great group of ladies. We have been eating a lot of banana bread and the ladies wondered if there was another bread we could try. So made up this cinnamon bread recipe, it turned out so good we agreed to not make it again for fear we would eat it all up right away. Maybe I should call this special occasion cinnamon bread?

Cinnamon Bread

1/4c       oil

1            egg

1/2c       milk

1 1/2c    flour

3/4c       sugar

2t            baking powder

1/2t        salt

2T           butter

1/3c       brown sugar

2t            cinnamon

1/2t        nutmeg

Grease and flour one loaf pan, set aside. Preheat oven to 350F.

Sift together 1 1/2c flour, 2t baking powder, 1/2t salt. Stir in 3/4c sugar, 1/4c oil, 1 egg, and 1/2c milk. Stir for about 1 minute, to combine well.

In small bowl mix together 2T butter melted, with 1/3c dark brown sugar, 2t cinnamon, and 1/2t nutmeg.

Pour half of batter into pan then top with half of butter mixture. Using a spoon drag the butter mixture through the dough, swirling it around. Pour remaining dough over top then rest of butter mixture. Again, drag the butter mixture through the dough.

Bake at 350 for 25-28 minutes.

Please note this recipe developed at high altitude, you may need to adjust your baking time.

Let cool 8 minutes, then remove from pan and cool completely. Or just eat it right away like we did.
